Chia Seeds "Yogurt"


2 cups coconut* 'milk'
¼ cup of chia seeds
½ cup mashed strawberries, mango or apple

* can also use hemp, almond.


  1. Process crust ingredients.
  2. Press in mold.
  3. Bake for 10 min.
  4. Blend dates, almond milk,  and ginger.
  5. Add pumpkin  puree and blend.
  6. Add spelt flour.
  7. Pour into pie shell and bake 60 min at 350 F.


1 ¼ spelt flour
½ -3/4 shredded coconut
½ cup raisins (soaked in water)
1-2 TB almond milk
Pinch of salt

Plantain Waffle


1  unripe plantain 

Water as needed

Pumpkin or Butternut Squash Pie


8-10 small dates or ¼ cup  Sucanat
¾ almond milk
½  tsp coriander, and ½ cardamom
¼ tsp ginger
Pinch of salt
1 ¾ cooked pumpkin puree
¼ spelt flour

1.  Wash and peel plantain

2.  Cut in slices

3.  Blend until the plantain is mashed and thick

4.  Cook in non-stick waffle maker until you see no more steam coming out. 


1. Mix the 'milk' with the chia seeds
2. Leave soaking for at least 1 hour.  Best if overnight

3.  Add ½ cup of mashed fruit and a tablespoon of chia seeds.
