Chia Seeds "Yogurt"
Recipe
2 cups coconut* 'milk'
¼ cup of chia seeds
½ cup mashed strawberries, mango or apple
* can also use hemp, almond.
Notes
Crust
1 ¼ spelt flour
½ -3/4 shredded coconut
½ cup raisins (soaked in water)
1-2 TB almond milk
Pinch of salt
Plantain Waffle
Ingredients
1 unripe plantain
Water as needed
Pumpkin or Butternut Squash Pie
Filling
8-10 small dates or ¼ cup Sucanat
¾ almond milk
½ tsp coriander, and ½ cardamom
¼ tsp ginger
Pinch of salt
1 ¾ cooked pumpkin puree
¼ spelt flour
Preparation
1. Wash and peel plantain
2. Cut in slices
3. Blend until the plantain is mashed and thick
4. Cook in non-stick waffle maker until you see no more steam coming out.
Notes
1. Mix the 'milk' with the chia seeds
2. Leave soaking for at least 1 hour. Best if overnight
3. Add ½ cup of mashed fruit and a tablespoon of chia seeds.
